By now, you've inevitably felt the effects of Springtime fever. One of the things that go along with warmer weather for me is margaritas, especially if they're extra fruity. There's not much that feels more right to me than loading up on chips and fresh guac while sipping on a bold flavored margarita outside with the sun glaring down on my skin.
Today, in honor of the new season, I'm sharing an easy, skinny margarita that you can whip up to surprise your guests with much more than just the standard, lime version. Now, I know that we're nearing beach season and many of you are "watching your figure" but, there's no reason you can't still enjoy happy hour. This Skinny Strawberry Mint Margarita is low calorie and has real fruit blended into it, along with fresh herbs sooo... you could like almost call it a balanced meal, almost.
Essentially, all you need is a SkinnyGirl Margarita base, fresh strawberries, and mint to get you set for relaxation and a beach-side mindset! Speaking of which, I'm getting the beach bug real bad right now and can't wait until the moment that I can sink my toes into the sand with the perfect book and this margarita in hand. What do you think? That sounds better to me than heading into the office today, no?
(Makes 2 Margaritas)
Mint Simple Syrup: In a small saucepan, combine 1 cup sugar and 1 cup water. Cook over medium-high heat, stirring constantly, until the sugar is dissolved. When the syrup starts to boil, lower the heat to maintain a simmer. Gently roll a handful of fresh mint leaves between your hands to release the aromatic oils, then add it to the syrup. Cook, stirring occasionally, for 10 minutes. Let cool to room temperature, then remove the mint leaves and strain the syrup if need be. Stored in a covered container in the refrigerator, the syrup will keep for about 2 weeks.
Note* If you prefer your margarita a little more on the sweet side, substitute granulated sugar for the Himalayan salt on the cocktail rim.
