Mmmm. Is it fair to say that I've discovered my favorite Fall dessert even before Halloween has passed? Well... it's official. I have. Generally, I hoard my pumpkin pie recipe until a little later in the season, in honor of Thanksgiving, but I knew that, as a blogger, it was mandatory that I create and share a pumpkin dessert for October as well. It's like, in the guidelines, obz. Plus, it just so happened that the other week, I stumbled across the beautiful combination of pumpkin pie and snickerdoodle. And, since we almost always have a pint of Talenti salted caramel ice cream in the freezer (Sam's favorite), the creation of this recipe became inevitable.
Now, I'm going to let you in on a little secret - I'm a big ice cream sandwich kind of gal. Shocker, right? I mean, who isn't an ice cream sandwich kind of person though, truly? There's something about biting into two gooey, freshly baked cookies with a ball of rich ice cream in the middle. For me personally, someone that doesn't enjoy ice cream sandwiches is immediately filed under the umbrella of people who don't like dogs. Honestly, if you don't like dogs, then do you even have a soul? It all just sounds quite...suspicious.
Anyway, I've been wanting to share an ice cream sandwich recipe on the blog for awhile now, and since I've already made 3 batches of these cookie ice cream sandwiches since I took my first bite, I figured that it was about time that I shared this gold with you.
Makes Approx. 10 Ice Cream Sandwiches
-1 cup butter, room temperature
-1 cup light brown sugar
-1/2 cup granulated sugar
-2 eggs plus 1 yolk
-2 tsp vanilla
-3 tsp pumpkin pie spice
-1 tsp baking powder
-3/4 tsp salt
-3 cups flour
-(1) bag Nestle dark chocolate chips
Cookie Coating -
-1/4 cup light brown sugar
-1 1/2 tsp pumpkin pie spice
Ice Cream Sandwiches -
-(1) pint Talenti salted caramel ice cream or vanilla bean ice cream (or both)
